Directions

Wash the spinach in a colander and shake off the excess water, then put it in a large saucepan.
Sprinkle the spinach with salt to taste.
Cover the pan and cook over a moderate heat for 1-2 minutes, shaking the pan vigorously from time to time, until the spinach has wilted and is tender.
Drain the spinach thoroughly in a colander, then return it to the pan and toss over a high heat until any remaining water has evaporated.
Add the butter and garlic and continue tossing until they are combined with the spinach.
Turn the spinach into a serving dish.
Drizzle with oil and lemon juice, season to taste and garnish with lemon rind.
