Spinach with Japanese Sesame Dressing Recipe
Ingredients
| Spinach | 750 Gram | |
| Sesame seeds | 6 Tablespoon | |
| 1 1/2 teaspoons golden caster sugar | ||
| Light soy sauce | 3 1/2 Tablespoon | |
| Mirin | 1 Tablespoon | |
| Sesame seeds | 2 Tablespoon, toasted | |
| Boiled brown or red rice | ||
| Miso soup | ||
Directions
1. Put the washed spinach into a large bowl or saucepan, pour boiling water over the leaves and blanch for 1 minute. Drain immediately and refresh under cold water to stop the cooking process. Drain well, then chop roughly.
2. Put the sesame seeds and caster sugar into a small food processor or blender and blend to a coarse puree, or use a pestle and mortar. Add the soy sauce, a little at a time, until it becomes a smooth paste. Add the mirin and blend well.
3. Pour the dressing over the spinach and toss well. Spoon the spinach into mounds in small serving bowls and top with the toasted sesame seeds. Serve with plain boiled brown or red rice and a bowl of miso soup.
