Spinach Timbales Recipe

Thes spinach timbales are healthy and savory timbables prepared with cooked fresh spinach. Spiced with nutmeg and prepared with added milk, the timbales have eggs in it and are baked to finish on the oven.

Ingredients

 
4 eggs
 
Dash of pepper
 
1 1/2 cups warm milk or 1/2 cup heavy cream and 1 cup chicken stock
 
Dash of nutmeg
 
1 teaspoon lemon juice
 
1 cup cooked spinach, well drained and chopped fine

Directions

Beat together eggs, warm milk, salt, pepper, nutmeg, and lemon juice until frothy.
Stir in spinach.
Pour mixture into 6 to 8 buttered custard cups, depending on size of the cups.
Set in a pan of hot water and bake in a preheated 325° oven for 20 to 30 minutes or until a knife tested in the center comes out dry.
Unmold onto hot plates and serve plain or with Hol landaise Sauce.
