Spinach Stuffed Mushrooms Recipe

Finally an interesting and good recipe of spinach stuffed mushrooms has arrived. The spinach stuffed mushrooms is made with vegetable which can be easily found at any grocery store. I prefer to make spinach stuffed mushrooms as an appetizer for all my family get-togethers. Will you be able to suggest a recipe on par with this spinach stuffed mushrooms recipe? I doubt.

Ingredients

 
3 tbsp (45 ml) butter
 
1 lb (500 g) spinach, cooked, chopped and well drained
 
2 garlic cloves, smashed and chopped
 
3 tbsp (45 ml) flour
 
1 1/2 cups (375 ml) hot milk
 
1/4 tsp (1 ml) nutmeg
 
1 1/4 cups (300 ml) grated mozzarella cheese
 
2 lb (900 g) mushroom caps, cleaned
 
2 tbsp (30 ml) melted butter
 
Salt and pepper
 
Juice 1/2 lemon
 
Dash paprika

Directions

Place 3 tbsp (45 ml) butter in large skillet and heat.
When melted, add spinach and garlic; cook 3 to 4 minutes over medium-high heat.
Mix in flour and continue cooking 2 to 3 minutes over low heat while mixing constantly.
Pour in milk and season with nutmeg, salt and pepper; mix well.
Add 1/2 cup (125 ml) cheese, mix and cook 2 to 3 minutes over medium heat.
Set mushroom caps on ovenproof serving platter; sprinkle with lemon juice, paprika and 2 tbsp (30 ml) melted butter.
Broil 5 minutes in oven.
Fill mushroom caps with spinach stuffing and top with remaining cheese.
Finish broiling about 5 minutes or until cheese starts to brown.
