 TOMATO SAUCE
 Tomatoes -2 x 14 oz., stewed
 Onion1 Cup (16 tbs), chopped (FILLING)
 Bay leaf1 (FILLING)
 Oregano1/2 Teaspoon (FILLING)
 Basil1/2 Teaspoon (FILLING)
 Tomato Paste5 1/2 Ounce (FILLING)
 Parmesan cheese 1/4 Cup (16 tbs), grated (FILLING)

Directions

GETTING READY
1) Preheat oven moderate to 350°F (180°C).

MAKING
2) In an uncovered Dutch oven boil water. Cook manicotti, cooking oil and salt for about 6 minutes.
3) Drain out and rinse with cold water.
4) Drain again.
5) To prepare the filling, remove casings from sausages.
6) In a pan scramble-fry meat.
7) Drain out from fat and keep aside.
8) In a bowl beat the eggs lightly.
9) Mix the next 9 ingredients.
10) Add sausage meat and combine.
11) Stuff manicotti with the mixture.
12) Keep aside.
13) To prepare the tomato sauce, in a saucepan add the first 6 ingredients.
14) Bring it to a boil.
15) Simmer and stir uncovered. Boil and thicken the sauce for 15 to 20 minutes.
16) Remove bay leaf.
17) At the base of the pan spoon sauce and cover.
18) In a large pan, put manicotti close together in single layer.
19) Pour the remaining sauce over it.
20) Bake for 20 minutes.
21) Sprinkle Parmesan cheese over it.
22) Bake for 10 minutes more.

SERVING
23) Serve hot.
