Spinach Stuffed Eggs Recipe
Ingredients
| Hard-boiled eggs | 4 , hardboiled | |
| 50 g. / 2 oz. ricotta or cream cheese | ||
| 30 ml. / 2 tablespoons grated Parmesan cheese | ||
| 30 ml. / 2 tablespoons cooked spinach, finely chopped | ||
| Pinch of grated nutmeg | ||
| 1.25 ml. / 1/4 teaspoon cayenne pepper | ||
| Salt | To Taste | |

Directions
Remove the yolks from the eggs and put in a small mixing bowl.
Add the cheeses and spinach.
Beat the mixture until it is smooth.
Season to taste with salt, pepper and nutmeg and then pile back into the egg whites.
Sprinkle over the cayenne.
