 Hard-boiled eggs4 , hardboiled
 50 g. / 2 oz. ricotta or cream cheese
 30 ml. / 2 tablespoons grated Parmesan cheese
 30 ml. / 2 tablespoons cooked spinach, finely chopped
 Pinch of grated nutmeg
 1.25 ml. / 1/4 teaspoon cayenne pepper
 Salt To Taste
 Pepper To Taste

Directions

Remove the yolks from the eggs and put in a small mixing bowl.
Add the cheeses and spinach.
Beat the mixture until it is smooth.
Season to taste with salt, pepper and nutmeg and then pile back into the egg whites.
Sprinkle over the cayenne.
