Spinach Stuffed Appetizer Oysters Recipe
|Frozen spinach souffle||6 Ounce (1/2 Of 12 Ounce Package)|
|Seasoned dry bread crumbs||3 Tablespoon|
|Parmesan cheese||3 Tablespoon, grated|
|Lemon juice||1⁄2 Teaspoon|
|Shucked oysters||8 , drained (Fresh)|
|Pimento strips||1⁄4 Cup (4 tbs) (For Garnish)|

1 Remove frozen souffle from package, Cut in half with a sharp knife.
2 Return 1/2 of souffle to the freezer.
3 In a 1-quart bowl, place remaining 1/2 of frozen souffle.
4 Microwave at 30% (MEDIUM LOW) for 3 minutes or until thawed.
5 Break up with a fork after 1-1/2 minutes. Let stand 3 minutes.
6 Stir bread crumbs and Parmesan cheese into souffle.
7 Place butter or margarine in a glass baking cup.
8 Microwave at 100% (HIGH) for 45 seconds or until melted. Stir in lemon juice.
9 Pat oysters dry on paper towels. Pierce with a large fork.
10 Dip oysters in melted butter or margarine mixture; place in rinsed shells.
11 Top oysters with spinach mixture.
12 Drizzle with any remaining butter or margarine mixture.
13 Arrange in a circle on a 12-inch-round microwave platter.
14 Top oysters with pimento strips.
15 Microwave at 50% (MEDIUM) for 4 to 5 minutes or until heated through.
16 Give platter a half turn after 2 minutes.
17 Let stand for 1 minute before serving.
