Simple Spinach Soup Recipe
Ingredients
| Spinach | 2 Pound (fresh) | |
| Chicken stock/Reduced-sodium canned broth | 8 Cup (128 tbs) | |
| Garlic | 1 Clove (5 gm), chopped | |
| Onion | 1 Small, chopped | |
| Cornmeal | 3 Tablespoon | |
| Flour | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Pepper | 1⁄2 Teaspoon | |
| Nutmeg | 1⁄2 Teaspoon, grated |

Directions
2. In a large saucepan, combine 1 cup stock, garlic, and onion. Bring to a boil over high heat. Add spinach and cook, stirring, 2 minutes. Add remaining chicken stock and bring to a boil.
3. In a small bowl, combine cornmeal and flour. In a slow stream add to stock, stirring as you pour. Cover and simmer over low heat 30 minutes.
4. Puree soup, in batches if necessary, in a food processor or blender. Season with salt, pepper, and nutmeg.
