Spinach Soup Recipe
Spinach Soup is popular for its health quotient. The leafy vegetables always have fewer options to cook. But spinach with meat stock and cream can surprise your taste. The melting butter and topped with sieved eggs, Spinach Soup is the ultimate traditional Indian soup.
Ingredients
1 pound fresh spinach, chopped
2 tablespoons minced green onion
1 garlic clove, minced
3 tablespoons butter
1/8 teaspoon freshly grated nutmeg
5 cups chicken, beef or veal stock
1 cup half-and-half cream
Pinch sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
Fresh lemon juice to taste
Butter, cut into bits
Sieved hard-cooked eggs
Paprika
Directions
Saute spinach, green onion and garlic in butter, stirring, until spinach is wilted.
Add nutmeg and stock, cover, bring to boil, lower heat and simmer 20 minutes.
Puree.
Add cream and seasonings, heat and adjust to taste.
Swirl in butter and sprinkle with sieved hard-cooked eggs and paprika.
