Spinach Soup Recipe

Ingredients
| Spinach | 1 pound, chopped | |
| 2 tablespoons minced green onion | ||
| Garlic | 1 Clove (5gm), minced | |
| Butter | 3 Tablespoon | |
| Nutmeg | 1/8 Teaspoon, freshly grated | |
| 5 cups chicken, beef or veal stock | ||
| Half and Half | 1 Cup (16 tbs) | |
| Pinch sugar | ||
| Salt | 1/2 Teaspoon | |
| Pepper white | 1/4 Teaspoon | |
| Fresh lemon juice to taste | ||
| Butter, cut into bits | ||
| Sieved hard-cooked eggs | ||
| Paprika | ||
Directions
Saute spinach, green onion and garlic in butter, stirring, until spinach is wilted.
Add nutmeg and stock, cover, bring to boil, lower heat and simmer 20 minutes.
Puree.
Add cream and seasonings, heat and adjust to taste.
Swirl in butter and sprinkle with sieved hard-cooked eggs and paprika.
