Spinach Soup Recipe
Ingredients
| Frozen spinach package | 2 | |
| Water | 1/2 Cup (16 tbs) | |
| Butter | 3 Tablespoon | |
| Onion | 2 Tablespoon, minced | |
| Flour | 3 Tablespoon | |
| Milk | 6 Cup (16 tbs) | |
| Kosher salt | 1 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Nutmeg - just a dash | ||
Directions
MAKING
1) In a pot of water, cook the spinach for about 5 minutes
2) Pass the spinach through a food mill
3) In a saucepan, melt the butter and saute onion for about 5 minutes
4) Add in the flour and then slowly the milk
5) Add in the spinach, salt, pepper and the nutmeg and cook on a low flame for about 15 minutes
SERVING
6) Ladle the soup into 4 bowls and serve with some croutons
