Cold Spinach Soup Recipe
Ingredients
| 1 lb. spinach, washed in salt water and trimmed | ||
| 3 scallions, coarsely chopped | ||
| 1/2 cucumber, peeled, seeded and coarsely chopped | ||
| 4 sprigs parsley, coarsely chopped | ||
| 4 sprigs dill, coarsely chopped | ||
| Chicken broth | 3 Cup (16 tbs) | |
| Salt and white pepper to taste | ||
| Sugar | 1/2 Teaspoon | |
Directions
GETTING READY
1) Blanch the spinach and puree it.
MAKING
2) To the pureed spinach add parsley, cucumber, scallions, dill and chicken broth.
3) Blend them to a fine paste.
4) Adjust sugar and seasoning.
SERVING
5) Hot spinach soup can be served with chopped hard boiled eggs or croutons.
6) Strips of smoked salmon is a popular garnish for cold spinach soups.
