Directions
In a 1 1/2-quart bowl MICROWAVE butter on HIGH until melted.
Stir in dry ingredients to make smooth paste.
Gradually stir in milk.
MICROWAVE 3 to 4 MINUTES on HIGH, or until thick, stirring twice.
Add slightly beaten egg yolks, blend well.
Stir in the spinach.
In a large mixing bowl, beat egg whites with cream tarter until stiff but not dry.
Fold thickened sauce into beaten egg whites and pour gently into a 6 to 8-cup souffle dish PROGRAM TO MICROWAVE on '6' for 2 minutes, then on '3' for 25 to 30 MINUTES.
Serve immediately.
