Ingredients

 Canned pitted california ripe olives1 1⁄2 Cup (24 tbs)
 Shredded spinach4 Cup (64 tbs) (Use Fresh Variety)
 Thinly sliced radishes1⁄4 Cup (4 tbs)
 Thinly sliced green onion2 Tablespoon
 Thinly sliced carrot1
 Cottage cheese1 Cup (16 tbs)
 Salad oil2 Tablespoon
 Cider vinegar2 Tablespoon
 Salt1 Teaspoon
 Dry mustard1⁄4 Teaspoon
 Liquid red pepper seasoning1 Dash

Directions

Cut olives into pieces; combine olives, spinach, radishes, onion and carrot in salad bowl.
Blend cottage cheese, oil, vinegar and seasonings together; pour dressing over salad, tossing well.
Garnish with additional ripe olives.
