Spinach Salsa Soup Recipe
Ingredients
| Vegetable cooking spray | ||
| Olive oil | 1 1/2 Teaspoon | |
| Onion | 3/4 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), minced | |
| 1 1/2 Cups commercial salsa | ||
| Tomato juice | 1 Cup (16 tbs) | |
| Sugar | 1 Teaspoon | |
| Whole tomatoes | 2 Can (10oz), undrained | |
| Tomato soup | 1 Can (10oz), condensed | |
| Frozen chopped spinach package | 1/2 | |
Directions
Coat a large Dutch oven with cooking spray; add olive oil, and place over medium-high heat until hot.
Add onion and garlic; saute 2 minutes.
Add remaining ingredients; bring to a boil.
Cover, reduce heat, and simmer 10 minutes or until thoroughly heated.
