Ingredients

 Firm tofu4 Ounce, drained (Dressing)
 1/4 cup Chinkiang vinegar or red wine vinegar
 Vegetable oil3 Tablespoon (Dressing)

 5 strips bacon, crisply cooked, drained, and crumbled
 Shiitake mushrooms4 Pound, thinly sliced (Dressing)
 Sliced almonds1/4 Cup (16 tbs), toasted (Dressing)

Directions

Place tofu in a blender.
Add remaining dressing ingredients and process until smooth and creamy.
Place spinach, bacon, mushrooms, and almonds in a salad bowl.
Pour dressing over salad and toss until spinach is evenly coated.
