Spinach Salad with Tofu Dressing Recipe

| Firm tofu | 4 Ounce, drained (Dressing) | |
| 1/4 cup Chinkiang vinegar or red wine vinegar | ||
| Vegetable oil | 3 Tablespoon (Dressing) | |
| Sugar | 1 Tablespoon (Dressing) | |
| Soy sauce | 1 Tablespoon (Dressing) | |
| Sesame oil | 1 Tablespoon (Dressing) | |
| Chili oil | 1 Teaspoon (Dressing) | |
| Garlic | 1 Teaspoon, minced (Dressing) | |
| Spinach | 1 Bunch (100gm) (Dressing) | |
| 5 strips bacon, crisply cooked, drained, and crumbled | ||
| Shiitake mushrooms | 4 Pound, thinly sliced (Dressing) | |
| Sliced almonds | 1/4 Cup (16 tbs), toasted (Dressing) | |
Directions
Place tofu in a blender.
Add remaining dressing ingredients and process until smooth and creamy.
Place spinach, bacon, mushrooms, and almonds in a salad bowl.
Pour dressing over salad and toss until spinach is evenly coated.
