Ingredients

 Orange rind2 Teaspoon, grated
 Orange juice2 Tablespoon
 White wine vinegar2 Tablespoon
 Honey1 Teaspoon
 2 tablespoons canola or vegetable oil
 10-ounce package fresh spinach, coarse stems removed, rinsed and spun dry
 Raspberries1 Cup (16 tbs)
 1 papaya (or 1 mango, or 2 peaches or nectarines), peeled, seeded, and sliced
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1) Tear spinach into bite-size pieces

MAKING
2) In a large bowl add the first five ingredients with salt and pepper to taste.
3) Whisk all the ingredients together.
4) Add spinach to the dressing along with raspberries.
5) Toss the salad gently.

SERVING
6) Places one-fourth of the papaya slices on each of four plates.
7) Mound one-fourth of the salad beside papaya.
