| Orange | 1 Medium, cut into pieces with skin | |
| Lemon | 1⁄3 Medium, with skin | |
| Fresh ginger | 2 Tablespoon, peeled | |
| Olive oil | 1⁄4 Cup (4 tbs) | |

Directions
1. In a blender, add carrot, orange, lemon, fresh ginger, olive oil and blend till smooth. Set aside.
MAKING
2. In a bowl, put spinach leaves, cranberries, walnuts and ginger orange dressing. Season with salt and toss till mixed.
SERVING
3. In a serving plate, serve the salad with some crusty bread or as it is.
TIPS
If the salad is dry to your taste, then add olive oil or orange juice.
