 Spinach leaves1 Cup (16 tbs), drained
 Lettuce leaves1/2 Cup (16 tbs)
 Mushrooms1/2 Cup (16 tbs), sliced
 Tomato1
 Low fat yogurt - 1/4 cup, plain
 Dijon Mustard1/2 Teaspoon
 Honey1/2 Teaspoon
 Ground ginger - a dash
 Egg - 1, hard boiled egg, diced

Directions

MAKING
1. In a medium bowl, mix spinach, lettuce, mushrooms ad tomato
2. In a smaller bowl, mix together all the other ingredients except egg and pur over the spinach mixture; toss till well blended

SERVING
3. Sprinkle diced egg on top and serve
