Ingredients
1 10-ounce bag spinach
1 medium-sized head Boston lettuce
1 head Belgian endive
1/4 pound medium-sized mushrooms
1 medium-sized lemon
1/3 cup olive or salad oil
1 teaspoon sugar
1 teaspoon chopped chives
3/4 teaspoon salt
1/2 teaspoon dry mustard
Directions
1. Into large salad bowl, tear spinach and Boston lettuce into bite-sized pieces. Cut endive crosswise in half; separate top leaves; cut bottom into wedges. Thinly slice mushrooms. Add endive and mushrooms to spinach mixture.
2. Grate 1 teaspoon peel from lemon; squeeze 2 tablespoons juice from lemon. In small bowl, mix lemon peel, lemon juice, olive oil, and remaining ingredients. Pour over spinach mixture; toss to mix well.
