Spinach Salad Recipe
Ingredients

| Parmesan cheese | 1 Tablespoon, grated | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Dijon Mustard | 2 Tablespoon | |
| Lemon juice | 3 Tablespoon | |
| Worcestershire sauce | 1 Teaspoon | |
| Sugar substitute | 1/2 Teaspoon | |
| Salad oil | 1/4 Cup (16 tbs) | |
| 1 pound spinach, stems removed, washed and dried | ||
| Hard-boiled eggs | 2 , hardboiled | |
| 4 slices bacon, cooked and crumbled | ||
Directions
Beat together egg, cheese, salt, pepper, mustard, lemon juice, Worcestershire sauce and sugar.
Gradually beat in oil, blending well.
Pour into a covered jar and refrigerate.
At serving time, tear spinach into bite-size pieces.
In a large salad bowl, combine spinach, eggs and bacon; pour on dressing and toss lightly.
Makes 6 servings.
