Spinach Rockefeller Recipe
Ingredients
| 4 pounds fresh spinach, cooked, drained and chopped | ||
| Eggs | 4 standard | |
| Dry bread crumbs | 1/2 Cup (16 tbs) | |
| Scallions | 1/2 Cup (16 tbs), minced | |
| Parmesan cheese | 1/4 Cup (16 tbs), freshly grated | |
| 2 tablespoons corn oil margarine, melted | ||
| 1 teaspoon dried | 2 Teaspoon | |
| Black pepper | 1/2 Teaspoon | |
| Cayenne pepper | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 12 thick (1/4 inch each) tomato slices | ||
| Garlic powder | 1/2 Teaspoon | |
Directions
Preheat oven to 350 degrees.
In a large bowl combine spinach, eggs, bread crumbs, scallions, cheese, margarine, thyme, black pepper, cayenne pepper and salt; mix well.
In a shallow baking dish arrange tomato slices in a single layer.
Onto each tomato slice spoon 1/4 cup spinach mixture.
Sprinkle with garlic powder.
Bake for 15 minutes or until spinach is set.
Arrange on serving platter.
Garnish with tomato slice halves if desired.
