 4 pounds fresh spinach, cooked, drained and chopped
 Eggs4 standard
 Dry bread crumbs1/2 Cup (16 tbs)
 Scallions1/2 Cup (16 tbs), minced
 Parmesan cheese 1/4 Cup (16 tbs), freshly grated
 2 tablespoons corn oil margarine, melted
 1 teaspoon dried2 Teaspoon
 Black pepper1/2 Teaspoon
 Cayenne pepper1/2 Teaspoon
 Salt1/2 Teaspoon
 12 thick (1/4 inch each) tomato slices
 Garlic powder1/2 Teaspoon

Directions

Preheat oven to 350 degrees.
In a large bowl combine spinach, eggs, bread crumbs, scallions, cheese, margarine, thyme, black pepper, cayenne pepper and salt; mix well.
In a shallow baking dish arrange tomato slices in a single layer.
Onto each tomato slice spoon 1/4 cup spinach mixture.
Sprinkle with garlic powder.
Bake for 15 minutes or until spinach is set.
Arrange on serving platter.
Garnish with tomato slice halves if desired.
