Spinach Ring With Cheese Recipe
Ingredients
| 2 10-ounce packages frozen chopped | ||
| Spinach, thawed and well drained | ||
| Cottage cheese | 1 Cup (16 tbs) | |
| Shredded Swiss cheese | 1/2 Cup (16 tbs) | |
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
| Eggs | 2 | |
| Ground thyme | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 1/4 cup buttery crackers crumbs (optional) | ||
Directions
1. Combine all ingredients, except buttered crumbs, in a 2-quart mixing bowl. Blend thoroughly. Pour mixture into a well-buttered microwavesafe 6-to 8-cup ring mold. Cover with wax paper.
2. Microwave at Cook Cycle 1 (power level 7) for 11 1/2 to 13 1/2 minutes, or until mold is set. Let stand, covered, 5 minutes. Turn out onto serving platter. Sprinkle, if desired, with buttered crumbs, and fill with scrambled eggs or a creamed food.
