Spinach Ricotta Roll Ups Recipe
Ingredients
| Frozen chopped spinach package | 1 , drained | |
| 1 tablespoon olive or canola oil | ||
| All purpose flour | 1 Tablespoon | |
| Milk fat | 1/3 Cup (16 tbs) | |
| Ground nutmeg | 1/8 Teaspoon | |
| Egg whites | 3 | |
| 1 cup part-skim ricotta cheese | ||
| 2 tablespoons chopped herbs, such as parsley, basil, or thyme | ||
| Parmesan cheese | 1 Tablespoon, grated (For the filling) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1. Preheat the oven at 375°F.
2. In a food processor or using a knife, chop finely the spinach. Transfer it to a bowl.
MAKING
3. Take a small saucepan and mix the oil with flour and cook about 2 minutes on medium flame. Keep stirring. Remove the saucepan from the heat.
4. Add milk, nutmeg, pinch of salt and pepper. Put in again on heat and bring to a boil. Cook for 1 minute or until smooth and thickened.
SERVING
5. Serve is a serving dish.
