Ingredients

 Frozen chopped spinach package1 , drained
 1 tablespoon olive or canola oil
 All purpose flour1 Tablespoon
 Milk fat1/3 Cup (16 tbs)
 Ground nutmeg1/8 Teaspoon
 Egg whites3
 1 cup part-skim ricotta cheese
 2 tablespoons chopped herbs, such as parsley, basil, or thyme
 Parmesan cheese1 Tablespoon, grated (For the filling)
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1. Preheat the oven at 375°F.
2. In a food processor or using a knife, chop finely the spinach. Transfer it to a bowl.

MAKING
3. Take a small saucepan and mix the oil with flour and cook about 2 minutes on medium flame. Keep stirring. Remove the saucepan from the heat.
4. Add milk, nutmeg, pinch of salt and pepper. Put in again on heat and bring to a boil. Cook for 1 minute or until smooth and thickened.

SERVING
5. Serve is a serving dish.
