Spinach Rice Balls Recipe
Ingredients
| Cooked rice | 2 Cup (16 tbs) | |
| Frozen chopped spinach package | 1 , squeezed | |
| 3/4 cup dry Italian style bread crumbs, divided | ||
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| Onion | 1/3 Cup (16 tbs), minced | |
| Egg whites | 3 , beaten | |
| Skim milk | 1/4 Cup (16 tbs) | |
| Dijon style Mustard | 1 Tablespoon | |
| Nonstick cooking spray | ||
Directions
Combine rice, spinach, 1/3 cup bread crumbs, cheese, onion, egg whites, milk, and mustard in large bowl.
Shape into 1 inch balls.
Roll each ball in remaining 1/3 cup bread crumbs.
Place on baking sheet coated with nonstick cooking spray.
Bake at 375°F for 10 to 15 minutes.
