Spinach Paneer Recipe
Ingredients
| 2 10-ounce packages frozen chopped spinach, thawed and drained | ||
| 2 medium-sized onions, chopped | ||
| 2 medium-sized fresh tomatoes, chopped | ||
| Salt | 1/2 Teaspoon | |
| 1/4 teaspoon ground chilies or cayenne pepper | ||
| Vegetable oil | 1 Tablespoon | |
| Water | 1 Cup (16 tbs) | |
| 1 cup Fried Paneer Cubes or Fried Ricotta Cheese Cubes | ||
Directions
Combine all ingredients except the Fried Paneer or Ricotta Cheese Cubes in a saucepan. Bring to a boil, then reduce heat to medium-low and cook uncovered for 15 minutes. Allow to cool for easy handling.
In a blender or food processor, process spinach mixture until smooth. Return to saucepan. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes or until excess water evaporates. Stir occasionally.
Add Fried Paneer or Fried Ricotta Cheese cubes. Stir gently and cook 5 more minutes.
