Spinach Goat Cheese Pita Pizzas Recipe
Ingredients
| 4 (6-inch) whole-wheat pita breads | ||
| Roasted red peppers | 1 To taste | |
| 1 log (10 ounces) fresh goat cheese | ||
| Ground black pepper | 1 To taste | |
| Baby spinach package | 1 | |
Directions
1. Heat oven to 500°F. Split each pita to make 2 rounds and place cut-side up on 2 large baking sheets. Remove peppers from oil (reserving oil). Cut peppers into strips and arrange on pitas. Dot pitas with goat cheese and sprinkle with pepper.
2. Bake on bottom rack of oven until cheese is melted and golden and crust is crisp, 10 to 1 2 minutes. Let cool slightly, then top each pizza with a handful of spinach and drizzle with red pepper oil. Serve immediately.
