Spinach-Feta Rice Recipe
Spinach-Feta Rice is a take on the well known Greek combination of feta cheese and spinach. My mom has been making this Spinach-Feta Rice recipe from when I was little. You will definitely thank me for sharing it!
Ingredients
1 cup ( 240 ml) California Basmati Brown Rice
2 1/4 cups (540 ml) chicken broth
1 medium onion, chopped
1 cup (240 ml) sliced fresh mushrooms
2 cloves garlic, minced vegetable cooking spray
1 tbs (15 ml) lemon juice
1/2 tsp (3 ml) dried oregano leaves
6 cups (1.4 1) shredded fresh spinach
4 oz (120 g) feta cheese, crumbled black pepper
Directions
Combine rice and broth in saucepan.
Bring to boil, stir.
Reduce heat, cover and simmer 45 minutes, until water is absorbed.
Cook onion, mushrooms and garlic in oil-sprayed skillet until tender.
Stir in lemon juice and oregano.
Add spinach, feta and pepper to rice; toss until spinach is wilted.
Add mushrooms and onions.
Bring to boil, stir.
