 Olive oil2 Tablespoon
 5-6 cooked new potatoes, sliced
 140 g/5 oz frozen spinach, defrosted and drained
 Garlic1 Clove (5gm), chopped
 100 g/4 oz feta, crumbled

Directions

1. Heat grill to medium. Beat eggs with some salt and pepper. Heat the oil in a non-stick frying pan, add the potatoes, then fry until golden. Add spinach and garlic, then heat through.
2. Reduce heat, scatter over feta, pour in eggs, then cook until just setting on top, 12-15 mins. Slide under the grill to brown.
