Mix together the breadcrumbs, cheese, beaten eggs and spinach. Season.
Using floured hands, coat the hard-boiled eggs with the spinach mixture. Dip in the beaten eggs and coat in breadcrumbs.
Deep fry until golden brown, drain on kitchen paper and keep warm.
To make the sauce melt the butter in a saucepan. Add the flour and cook, stirring continuously, for a few minutes. Stir in the milk and bring to the boil, then stir in the cheese and season.
Cook gently until the cheese has completely melted then add a generous pinch of nutmeg.
Cut the spinach eggs in half and arrange on a warmed serving dish. Pour over the sauce, sprinkle with a little nutmeg and garnish with tomato wedges.
