Spinach Dressing Recipe
Ingredients
| Spinach | 1/2 Pound | |
| 4 Cups Coarse Bread Crumbs | ||
| 3/4 Lb. Pork Sausage | ||
| Onions | 2 Medium | |
| Cream cheese | 3 Ounce | |
| Egg | 1 , beaten | |
| Dried thyme | 1/2 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Wash spinach and cook in saucepan with small amount of water for 10 minutes; remove from liquid and chop.
Sprinkle some of liquid over bread crumbs.
Cook sausage in heavy skillet, covered, for 10 minutes.
Remove sausage and add onions to fat in skillet; cook till golden brown.
Mash sausage with fork and add to the spinach; combine with onions.
Blend cream cheese with mixture; add egg to bread crumbs and blend well with spinach mixture in skillet.
Heat but do not brown.
Add seasonings.
Should be light, not too moist.
Mix and use for stuffing a 16 lb.turkey, or cool & store in refrigerator till ready to use.
