Ingredients

 6 crepes
 Spinach1 1/2 Cup (16 tbs), finely chopped
 Cinnamon
 Cheese sauce
 Butter/Margarine2 Tablespoon
 Onion1 Small, finely chopped
 All purpose flour2 Tablespoon
 1 cup partly skimmed milk
 Cheddar Cheese1/2 Cup (16 tbs), grated
 Salt To Taste
 Pepper To Taste

Directions

Preheat oven to BROIL.
On a non stick baking sheet, arrange crepes.
Cover with spinach.
Season with a pinch of cinnamon.
Roll or fold into a square.
Set aside.
In a skillet, melt butter.
Cook onion.
Sprinkle in flour.
While stirring, cook 2 minutes.
Over moderate heat, fold in milk.
Stirring constantly, continue cooking until creamy smooth.
Season.
Add cheese.
Stir until cheese has melted.
Spoon cheese sauce over each crepe.
Broil in oven 2-3 minutes.
