Spinach Cottage Pie Recipe
Ingredients
| Pastry for 9-inch pie shell | ||
| Frozen chopped spinach package | 2 , Defrosted | |
| Cottage cheese | 1 Carton (1l), creamed | |
| Sugar | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
| 1/2 teaspoon poultry seasoning, or basil and nutmeg, mixed | ||
| Eggs | 4 , Well beaten | |
Directions
Line (9-inch) pie dish with pastry.
Press excess liquid from spinach.
Spread in pastry-lined dish.
Fold cottage cheese, sugar, salt and poultry seasoning into beaten eggs.
Pour egg mixture over spinach.
Cover.
MICROWAVE 25 MINUTES on '8', or until set.
Let stand 5 minutes to firm.
Custard is done when metal knife inserted in center comes out clean.
Press excess liquid from spinach.
Spread in pastry-lined dish.
Fold cottage cheese, sugar, salt and poultry seasoning into beaten eggs.
Pour egg mixture over spinach.
Cover.
