2 10-oz (284 g) bags fresh spinach
 
1 cup (250 mL) bread cubes
 
3 tbsp (50 mL) butter
 
2 tbsp (30 mL) flour
 
1 cup (250 mL) milk
 
1/2 tsp (2 mL) dry mustard
 
1/4 cup (60 mL) grated cheese
 
3 tbsp (50 mL) spinach water
 
Salt and pepper to taste

Directions

€¢ Clean and microwave the spinach, covered, as for Spinach Nature, 3 minutes at HIGH.
€¢ Drain well, reserving 3 tablespoons (50 mL) of the spinach water.
€¢ Place the bread cubes and 1 tablespoon (15 mL) of the butter in a microwave-safe plate, stir well. Microwave 5 to 6 minutes at HIGH, or until the bread cubes have browned, stirring twice during the cooking period. Set aside.
To make the sauce
€¢ Place remaining butter in a microwave-safe bowl and melt 2 minutes at HIGH.
€¢ Add remaining ingredients, mix well.
€¢ Microwave, uncovered, 3 to 4 minutes at HIGH, stirring once. Microwave at HIGH 2 to 3 minutes more or until sauce is creamy.
€¢ Place spinach in a serving dish, pour creamy sauce over, top with the browned diced bread.
€¢ When ready to serve, microwave 3 to 4 minutes at MEDIUM-HIGH.
