Ingredients
2 tbsp (30 ml) oil
2 medium-sized onions, finely sliced
1 cup (250 ml) spinach, stemmed
2 eggs, beaten
1 lb (450 g) tofu, crumbled
1 tsp (5 ml) salt
1/2 tsp (2 ml) pepper
1/2 tsp (2 ml) nutmeg
3/4 CUP (180 ml) grated Cheddar cheese
1 9-inch (22-cm) pie crust, uncooked
Directions
– Preheat oven to 350 °F (175 °C).
– In a skillet, heat oil, saute onions and set aside.
– Blanch spinach for 1 minute in boiling water, drain and set aside.
– In a blender, mix together eggs, tofu and seasonings until mixture is smooth and creamy. Add onions, spinach and cheese and stir well. Pour into pie crust and bake for 45 minutes.
