Ingredients

 
1 lb spinach fettucine
 
Salted water
 
2 tsp butter
 
1 clove garlic, chopped
 
1 French (dry) shallot, chopped
 
2 cups (500 ml) spinach, cut in strips
 
1 cup (250 ml) ricotta cheese
 
1/2 cup (125 ml) 15% cream
 
1 tsp (5 ml) chives, chopped
 
2 tsp (10 ml) parsley
 
Salt and pepper

Directions

–  Cook the noodles in boiling water according to package directions, rinse them under cold water and drain.
–  In a skillet, melt the butter and saute the garlic and shallot but do not brown. Stir in the spinach, ricotta cheese, cream and herbs. Season with salt and pepper. Cook over low heat for about 5 minutes, stirring continually.
–  Plunge the cooked noodles in boiling water to heat them up, then drain them, put them on a serving dish, and pour the spinach and ricotta sauce on top.
