Spinach And Ricotta Dumplings Recipe
Ingredients
6oz. cooked drained spinach (frozen is fine)
Salt and pepper to taste
Pinch nutmeg
1/2 tbsp. soft butter
1/2 cup ricotta cheese
1 egg
3 tbsp. Parmesan cheese
2 tbsp. flour
Optional Butter and Cheese Sauce
1/4 cup melted butter
1/4 cup Parmesan cheese
Directions
Combine in food processor.
In large pot of simmering water (not boiling water), drop by tea-spoonfuls and cook just until they rise to the top, approx2-4 minutes.
Carefully remove them with a slotted spoon and place in serving dish.
