Ingredients
4 slices cooked bacon
1 pound fresh spinach
2 hard-cooked eggs, finely chopped
1/2 pound fresh mushrooms, cleaned and sliced
2 teaspoons grated orange peel
2/3 cup orange juice
1 tablespoon lemon juice
1/3 cup bacon drippings
2 tablespoons soy sauce
1/2 teaspoon garlic powder
Directions
1. Crumble bacon into small pieces.
2. Wash spinach and remove tough stems. Dry with paper towel. Tear leaves into bite-size pieces and arrange in salad bowl.
3. Add eggs, mushrooms, and bacon. Cover tightly and refrigerate until serving time.
4. In a 1 quart glass measure, blend orange peel, orange juice, lemon juice, bacon drippings, soy sauce, and garlic powder. Cook 1 to 2 minutes, stirring every 30 seconds, until mixture boils.
