Ingredients

 Frozen chopped spinach package1
 Vegetable cooking spray
 Ground chuck1 pound
 Celery1/2 Cup (16 tbs), thinly sliced
 Onion1/2 Cup (16 tbs), chopped
 Cooked1/2 Cup (16 tbs)
 Egg1 , beaten
 Salt1/2 Teaspoon
 1/2 teaspoon dried whole rhyme
 Pepper1/4 Teaspoon
 Shredded cheese1/2 Cup (16 tbs)
 Sweet red pepper1 To taste

Directions

Cook spinach according to package directions, omitting salt; drain well.
Set aside.
Coat a large nonstick skillet with cooking spray.
Add ground chuck, celery, and onion.
Cook over medium heat until browned, stirring to crumble meat.
Drain well; pat dry with paper towels.
Combine spinach, meat mixture, rice, and next 4 ingredients in a medium bowl; mix well.
Place mixture in a 1 1/2-quart baking dish that has been coated with cooking spray.
Bake, covered, at 350° for 20 minutes.
Top with cheese and bake, uncovered, 5 minutes or until cheese melts.
