Spider Corn Cake Recipe
Spider corncake is a homemade corn bread cake made with cornmeal. Prepared with a batter of buttermilk, eggs and seasoned to taste, the spider corncake is oven baked and can be served as desired.
Ingredients
1 1/2 cups white corn meal, preferably water ground
1 tablespoon sugar
1 teaspoon salt
1 teaspoon baking soda
2 eggs, well beaten
2 cups buttermilk
1 1/2 tablespoons melted butter
Directions
Start your oven at 450° and put in a 12 inch iron skillet or spider to heat.
Sift together corn meal, sugar, salt, and baking soda into a bowl.
Combine eggs and buttermilk and stir into corn meal mixture, keeping it smooth.
Last of all, stir in butter.
Pour into the hot spider, well greased, and bake (at this same high temperature) for 30 minutes.
