Spicy Zucchini Bars Recipe
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Whole wheat flour | 1 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Ground cinnamon | 2 Teaspoon | |
| Ground cloves | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Eggs | 2 | |
| Vegetable oil | 1/2 Cup (16 tbs) | |
| Firmly packed brown sugar | 1/2 Cup (16 tbs) | |
| Yogurt | 1 Carton (1l) | |
| Vanilla extract | 1 Teaspoon | |
| Squash zucchini | 1 1/2 Cup (16 tbs), shredded | |
| Vegetable cooking spray | ||
| Powdered sugar | 2 Tablespoon, sifted | |
Directions
Combine flour, baking powder, soda, cinnamon, cloves, and salt in a medium bowl; set mixture aside.
Combine eggs, oil, sugar, yogurt, and vanilla in a large bowl; beat well.
Stir in zucchini; add flour mixture, and stir just until moistened.
Pour batter into a 13- x 9- x 2-inch baking dish coated with cooking spray.
Bake at 350° for 30 minutes or until a wooden pick inserted in center comes our clean.
Cool completely in pan.
Sprinkle with powdered sugar, and cut into bars.
