Spicy Yellow Peach Pickle Recipe

Ingredients
4 medium sized onions
5 lb. yellow peaches
3 red chillies (no seeds)
2 tblspns, curry
powder
1 dssrtspn. whole
peppercorns
1 rounded tblspn, cornflour
1 dssrtspn. salt
1 cup yellow sugar
2 bottles vinegar
1 good tspn, tur-
meric
1 dssrtspn. whole
allspice
Directions
Halve the peaches, remove stones with a sharp-pointed teaspoon, then peel and slice the peach halves.
Lay the slices in a large dish, sprinkle the salt over them and leave over- night.
Next day, place the vinegar (keeping back 1/2-cup) in a saucepan with the spices tied in a muslin bag, and the chillies.
Add the onions finely sliced, and boil till the onion slices are quite soft.
Mix the turmeric, sugar, curry powder and cornflour with the 1/2-cup vinegar and add this, slowly, to the boiling vinegar, stirring con- stantly.
Boil over a low heat for 10 minutes, add the sliced peaches and continue to boil gently for 30 minutes.
Leave to get cold, remove the chillies and the bag of spices and bottle at once.
