Directions

In a large skillet, stir the rice over medium heat for 5 minutes.
Add apple juice, water, allspice, vanilla, and lemon peel.
Bring to a boil and boil for 5 minutes.
Add raisins, apricots, and pineapple.
Cover with lid slightly ajar and simmer for 20 minutes or until the rice is tender.
Add more liquid if needed.
Variation â–  Substitute brown rice for the white rice.
Substitute 1/2 teaspoon curry powder for the allspice.
Substitute 1/4 cup chopped onions and 1/4 cup chopped fresh apple for the apricots and pineapple.
