Spicy Pork And Bean Casserole Recipe
Ingredients
15 ounces pork cubes (1-inch cubes)
2 teaspoons vegetable oil
1/2 cup diced onion
2 garlic cloves, minced
1 medium green bell pepper, seeded and cut into 1-inch squares
1 tablespoon plus 1 teaspoon chili powder
1/2 teaspoon ground cumin
1 cup each tomato sauce and water
1/4 teaspoon salt
Dash ground red pepper
8 ounces drained canned white kidney (cannellini) beans
2 ounces sharp Cheddar cheese, coarsely shredded
Directions
On rack in broiling pan broil pork cubes until rare; set aside.
In 1 1/2-quart saucepan heat oil; add onion and garlic and saute until onion is translucent.
Stir in pork cubes, green pepper, chili powder, and cumin; add tomato sauce, water, salt, and red pepper and stir to combine.
Cover and let simmer, stirring occasionally, until pork is fork-tender, about 45 minutes.
Add beans and let simmer, uncovered, for 10 minutes longer.
Transfer pork mixture to 1 1/2-quart flameproof casserole; sprinkle with cheese and broil until cheese is bubbly, about 3 minutes.
