Spicy Orange Beef Lettuce Packets Recipe
Ingredients
| 1 lb. beef top round or boneless top sirloin steak, cut 3/4 inch thick or flank steak | ||
| Cornstarch | 2 Teaspoon | |
| Vegetable oil | 1 Tablespoon | |
| Red pepper | 1/4 Teaspoon, crushed | |
| Shredded carrot | 1 Cup (16 tbs) | |
| Green onions | 1/2 Cup (16 tbs), thinly sliced | |
| 2 heads Boston lettuce | ||
| 2 tbs. frozen orange juice concentrate, defrosted | ||
| 2 tbs. Hoisin sauce | ||
| Rice wine vinegar | 2 Tablespoon (Sauce:) | |
| Soy sauce | 2 Tablespoon (Sauce:) | |
| Cornstarch | 2 Teaspoon (Sauce:) | |
Directions
Trim fat from beef steak.
Cut steak lengthwise in half and then crosswise into 1/8 inch thick strips.
In medium bowl, combine beef and 2 tsps.cornstarch; toss to coat.
Set aside.
In small bowl, combine sauce ingredients; set aside.
In large nonstick skillet, heat oil and red pepper over medium high heat until hot.
Add beef (1/2 at a time) and stir fry 1- 2 minutes or until outside surface is no longer pink.(Do not overcook.)
Add sauce, carrot and green onions; cook and stir until sauce is thickened and bubbly.
To assemble, spoon small amount of beef mixture in center of each lettuce leaf and fold over to close.
