Spicy Meatball Soup Recipe
Spicy Meatball Soup is popular with my family, its sure to be so with your family too. Spicy Meatball Soup goes perfectly as Side Dish. In my view, to call yourself a chef, you need to have a personal recipe of Spicy Meatball Soup, just like I do.
Ingredients
2 hard-cooked eggs
1/2 cup cooked brown rice
1/4 cup soft bread crumbs
1/4 cup chopped green onion
1/4 cup chopped pitted ripe olives
1/4 teaspoon dried rosemary crushed
Dash ground cloves
Dash ground cinnamon
1/2 pound ground beef
1/2 pound ground pork
Raisins
2 cups beef broth
1 10 3/4-ounce can condensed tomato soup
1 tablespoon chili powder
1/2 cup shredded Monterey Jack cheese (2 ounces)
Coarsely chopped pitted ripe olives (optional)
Chopped green onion (optional)
Directions
Separate egg yolks from egg whites.
Chop each separately.
In a bowl combine the egg yolks, rice, bread crumbs, the 1/4 cup green onion, the V4 cup ripe olives, the rosemary, cloves, and cinnamon.
Add ground beef and pork; mix well.
Using 1 1/2 tablespoons meat mixture for each meatball, wrap mixture around two or three raisins and shape into balls.
In a large saucepan combine beef broth, condensed tomato soup, chili powder, and meatballs.
Bring to boiling; reduce heat.
Cover and simmer for 30 minutes.
Stir in chopped egg whites.
Top each serving with some of the cheese, and additional olives and chopped green onion, if desired.
