Ingredients

 
Tomato Olivada-
 
2 tbsp honey
 
1 medium-sized tomato, diced
 
1/2 small green pepper, cored, seeded, and chopped
 
1/2 small red onion, chopped
 
12 kalamata olives, pitted and coarsely chopped
 
1 tbsp sherry wine vinegar
 
1 tbsp olive oil
 
1/8 tsp salt
 
Chicken-
 
1 jalapeno chili, stemmed, seeded and finely chopped
 
2 tbsp honey
 
1/4 tsp salt
 
4 boneless, skinless chicken breast halves
 
1 lb. prepared polenta, sliced 1/2-inch thick.

Directions

1. Tomato Olivada: In a medium sized bowl, stir honey, tomato, green pepper, onion, olives, vinegar, olive oil and salt. Set aside until time to serve.
2. Chicken: In a bowl, mix jalapeno, honey and salt. Rub the mixture over chicken, cover and refrigerate for 1 hour. Heat gas grill to medium-high and grill chicken about 11-12 minutes until internel temperature reaches 160 degrees. Grill the polenta about 4 minutes on each side until golden brown. Top the chicken breast halves with the tomato olivada. Serve with polenta.
