Ingredients

 Vegetable oil1⁄4 Cup (4 tbs)
 Garlic clove6 Large, finely chopped
 Uncooked medium shrimp2 Pound (peeled and deveined)
 Carrots2 Cup (32 tbs), cut into julienne strips (2 large sized)
 Crushed red pepper flakes1⁄2 Teaspoon (if desired)
 Chopped cilantro1⁄4 Cup (4 tbs) (fresh)
 Hot cooked rice1 Cup (16 tbs) (if desired)

Directions

1. Heat large skillet or wok over medium-high heat. Add oil; rotate skillet to coat side.
2. Add garlic; stir-fry 1 minute. Add shrimp; stir-fry 1 minute. Add carrots and red pepper flakes; stir-fry about 3 minutes or until shrimp are pink and firm and carrots are crisp-tender. Stir in cilantro.
3. Serve over rice.
