Ingredients
1 tablespoon peanut or vegetable oil
2 garlic cloves, sliced
1 cup each thinly sliced onions and mushroom caps
8 ounces boned cooked pork, cut into 3 x 1-inch strips
2 to 3 drained canned mild green chilies, seeded and thinly sliced
2 tablespoons each lime juice (no sugar added) and teriyaki sauce
1 tablespoon firmly packed dark brown sugar
Directions
In 12-inch nonstick skillet heat oil; add garlic and saute until browned.
Using a slotted spoon, remove and discard garlic.
Add onions and mushrooms to skillet and saute until lightly browned; add pork and chilies and stir to combine.
Cook until thoroughly heated.
In small cup or bowl combine remaining ingredients; pour over pork mixture, stir to combine, and bring to a boil.
Reduce heat and let simmer until mixture is thoroughly heated, about 3 minutes.
