pomfret fish, weighing about 1/2 kg, washed and filleted
 
juice of 1 1/2 lime, grated rind of 1 lime
 
pinch of turmeric powder
 
2-3 tablespoons fresh coriander, ground
 
1 tablespoon fresh mint, ground
 
5 cloves garlic, ground
 
1/2 teaspoon salt
 
1/2 teaspoon black pepper
 
1-2 green chillies deseeded and chopped or ground
 
1 egg, lightly beaten with 2 tablespoons water
 
breadcrumbs
 
oil for frying

Directions

1 Mix together all the except the fish, egg, and breadcrumbs. This is the marinade.
2 Make cuts on the fillets and rub the marinade into them and all over the pieces. Keep aside for a couple of hours if possible, otherwise for at least half ah hour. It would be better to keep the fish in the refrigerator during this period.
3 Dip in the beaten egg and then coat evenly with the breadcrumbs.
4 Heat the oil. It should be hot but not smoking. Slip the pieces about 3-4 at a time into the pan and fry till golden brown on both sides. This will take between 8 to 10 minutes. Remove and drain on the brown paper. Serve immediately.
