Spicy Cumin Pasta Recipe Video
I am constantly being inspired to get in the kitchen and try a new dish and that inspiration can come from many different places; an article, a dinner out, a memory of a childhood meal, a T.V. show, a picture, but often times my inspiration comes from what my friends are making for dinner.
This is a recipe that my friend Salomee made for my Husband and I when we were over for dinner. I must admit, my initial reaction to pasta and potatoes was slightly hesitant (I mean c'mon, way too many carbs right?) but boy, as soon as I tasted this dish I was in love.
It is so simple. Pasta. Sweet potatoes. Chili peppers. Cumin. Olive oil. Salt. That's it!
I would never in a million years have put these ingredients together, but I sure am happy that Salomee did!

Ingredients
* 1/2 lb. of whole wheat spaghetti
* 2 tbsp. extra virgin olive oil
* 1 tbsp. cumin seeds
* 1/2 tbsp. Thai chili peppers, diced
* 1 sweet potato, peeled and diced
* 1/4 cup of reserved pasta water
* 1/2 cup of cilantro, chopped
* Salt
Directions
Get a big pot of salted water going for your pasta.
1. Heat 1&1/2 tbsp of olive oil in a large saute pan over medium heat. Stir in cumin seeds and chili peppers and cook for about 1 minute, it will be very fragrant.
2. Add potatoes into pan along with a fat pinch of salt. Stir until potatoes are lightly coated with oil and spices. Allow to cook for 8-10 minutes, stirring a few times, until potatoes are tender.
3. In the meantime, cook up your pasta. Remember to reserve 1/2 cup of pasta water before draining.
4. Add pasta to saute pan with potatoes. Give it another pinch of salt and stir in mix in reserved pasta water.
5. Stir in cilantro and give it one last mix. Serve up a plate and enjoy!
*Thai chili peppers are very, very, spicy.
